Cooking Up Love and Treats

Let’s talk about cooking and being made with love. Every week, one of Sycamore Run’s very own residents, Susan Buzzard, hosts a creative chef class for her peers. She proudly volunteers to lead a class in activities for those who want to participate. We love that Susan can share her passion for cooking and baking with others, and we always want to find ways to support her in her hobby.
Every week, she picks a tasty treat she knows everyone will love. Our residents all have a hand in creating the snack of choice that’s as sweet as they are. This week, Susan led a class on how to make no-bake, healthy, peanut butter balls!
A few staff members and residents sat in during the class and were very impressed with Susan's baking skills. One resident said,
“I’m just here for the taste testing. My taste buds are registered with the FDA!” We also had a very intense conversation about which brand of peanut butter is the best. The majority went with Jif, but there were some who prefer Skippy.
Susan was kind enough to share the recipe with us. We did improvise by adding a few more chocolate chips, but the truth is, you can never go wrong with more chocolate chips. Ingredients:
2 Cups of oatmeal
½ Cup of Jif peanut butter
1/3 Cup of chocolate chips
1/3 Cups of dried cranberries
1/3 Cup of chopped nuts (optional)
1/3 Cups of honey
¼ cups of shredded coconut
1 teaspoon of cinnamon
Directions: In a large bowl combine all of the ingredients listed. Mix until soft. Once soft roll into balls and place on a cookie sheet. Stick it in the fridge for about 30 minutes to harden up. Enjoy.
